Carrot Ribbon Salad
Very fast, yet interestingly looking, this carrot salad will add a lot of color to your table.

INGREDIENTS:
7 Long Carrots
1 teaspoon Curry Powder
2 tablespoons Olive Oil
1 tablespoon Honey
1 Lemon
Salt
Freshly Ground Black Pepper
Small Bunch Cilantro

PREPARATION:
Wash the carrots and peel them.
Then using a veggie peeler slice up all the carrots into ribbons. Place into a bowl.
In a small saucepan combine oil curry powder and honey.
Cook for a couple of minutes until sizzling.
Pour the dressing over the carrots and then zest a lemon on top
. Squeeze the juice from the lemon add salt and pepper and mix together.
Add salt and pepper to taste. Garnish with some chopped cilantro. Enjoy!
